It’s no secret that I am a huge fan of all things Asador. Never heard of Asador? You’re missing out. Asador is the restaurant that lives in the lobby of the Renaissance Hotel and it is one of the few restaurants that get better each time I visit.
During the summer, Asador hosts special Harvest Dinners, which are five-course meals paired with some sort of alcohol situation. I was lucky enough to be invited to the July Harvest Dinner with beer pairings. Now, I like to think of myself as a well-educated individual but I don’t think there are enough words in Webster’s Dictionary to describe how amazing the food was. Chef and Partner, Dean Max, and Executive Chef, Brad Phillips created an unforgettable meal that left all of the guests overly satisfied.
From gator bites with jalapeño and dill aioli to poached farm fresh egg, heirloom prosciutto and baby arugula salad with beer mustard vinaigrette, the beginning of the meal set a strong precedence for the rest of the evening. The vinaigrette on the salad alone took a month to create the flavors that we enjoyed. For entrees, guests enjoyed Fried Hudspeth Farm Chicken Thighs with Deep Ellum blue cheese, grilled radicchio slaw and cashews; Seared Halibut with garlic chive puree, heirloom tomato salad with pea greens and bacon dust; as well as Broken Arrow Antelope Short Ribs with Texas Peach BBQ, cauliflower puree and broccoli rabe. The winner of the evening for me was dessert. A brown butter cake with malt ice cream with a graham cracker and peanut crunch. It was pee your pants delicious.
The use of local purveyors is what Asador is all about. So much so, that every single day the menus are printed to reflect what the Chefs were able to find at the farmers market or what product seemed freshest. If there is one thing the Chefs at Asador consistently succeed in, it is that nothing is an afterthought. It’s as though each and every stir of the spoon or grind of the salt shaker is well thought out and meaningful.
